I never get a good ear on my sourdough loafs and can't figure out why I feel like my score is pretty deep, and I spray some water to create steam which I read should help. Any ideas?

Thin, very sharp blade and angle it more. Some lames are curved which helps. What do you use now?

I use something basic like in your picture - handle with a razor blade. I'm able to make the cuts without a problem but for some reason the ear just isn't very defined

Are you tilting it enough though? I just started a few weeks go and recently found that once I started tilting more than 45° it helps create that thin top that will help create the ear.

I don't think it would hurt to bump it up to 500 for the first 20 minutes if possible. You want that initial spring to be as fast as possible. My method is: Preheat dutch oven and lid @ 500 let oven charge for at least 10 min once up to temp bake lid on for 20 min, lower to 450, bake 10 more min lid off for 20-25 min
