This is the new UX standard for user experience in minting NFTs in crypto consumer apps and L2 like BASE: embedded Smart accounts + passkeys. There's no need to enter an address; the dapp creates a Smart account for you, and you can use that Smart account across different services that use the same provider. demo.cometh.io

I use Apple devices and I feel like I’m behind on passkeys. I use random strong passwords and 2FA on everything now but I keep getting notifications to update and it seems more clunky/less secure than my current system — am I missing something?

It is as secure as your current system. Here, secure passwords and two-factor authentication (Face ID) are used, making it just as safe. This system (passkeys) is easier to use because everything is integrated into the phone instead of having to use an app like 1Password and another app for two-factor authentication like Google Authenticator. It is also a matter of preference for those who are now getting started with using web3.
