im very late, but i just discovered 3blue1brown and damn is this channel good

3blue1brown's early vids on neural networks is what got me interested in AI. Truly talented in his ability to break down hard-to-grasp concepts using animations (i believe he creates them via his own proprietary open-source animation software too!)

Also bonus -- I absolutely love the animations in this vid explaining convolutions:
