Can you tell me WHY a smoothie at Erewhon costs $22.75?! And how did they make it such a popular product that people are willing to wait in line for 20-30 minutes to get one?

I think it is the immediate satisfaction one gets
(1) I can post about it on socials and get the likes (dopamine) 
(2) I can enjoy my smoothie right now which also gives me an emotional boost

People who can afford it dont rationally weigh up their options they just get a feeling of "GIVE ME MY SMOOTHIE"
