What does it mean to be a fully onchain organization in 2024? Are there good examples of teams doing this? Everything down to cap table management, employment, taxes and payroll?

I could bet a lot of DAOs keep treasury management off chain, on all sorts of centralized tools (from Excel to GDocs and beyond)

not saying offchain management isn't good. it is, or else we run the risk on adding complexity and cost on stuff that doesn't need to live on the blockchain. But things related to treasury can benefit greatly from being onchain. Immutability matters.
