Is it safe to uninstall/reinstall the iOS app? The “delete user data” prompt is scary. Can I recover my account via means other than recovery phrase (i.e. connected wallet signature)?

Assuming you have your recovery phrase safely stored yes. You can also use your desktop app to sign in with QR code to your phone. On-chain recovery system is coming later this year!
