Healthy Banana Oat Pancakes Ingredients: 1 cup rolled oats (or oat flour) 1 ripe banana 2 eggs ½ cup milk (dairy or non-dairy) 1 teaspoon baking powder ½ teaspoon cinnamon (optional) 1 teaspoon vanilla extract A pinch of salt 1 teaspoon honey or maple syrup (optional) Coconut oil or butter for cooking Instructions: 1. Blend the oats in a blender or food processor until they become a fine flour. 2. Add the banana, eggs, milk, baking powder, cinnamon, vanilla, salt, and sweetener. Blend until smooth. 3. Heat a non-stick pan over medium heat and lightly grease with coconut oil or butter. 4. Pour small amounts of batter to form pancakes. Cook for about 2 minutes until bubbles form, then flip and cook for another minute.
