I wanted a trendy café-style breakfast, but I thought poached eggs were too complicated. turns out, they’re not. here’s an easy method:

bring water to a boil, then reduce the heat so there are only small bubbles. cack the egg into a bowl, then gently slide it from the bowl into the water. wait 3–4 minutes, then take it out.
