tip#1 tap the steak with paper towel before you cook it to get the moisture out to cook a good steak, you need to fry the surfaces to encapsulate the meat juice the extra moisture is going to "steam" the steak @edit @to @nicolasdavis.eth

tip#2 don't use olive oil, instead use canola or other cheap oil that has higher smoke point if you use olive oil to cook steak, you're most likely going to burn all your ingredients unless you want your steak super rare @edit @to @nicolasdavis.eth

I mean it's okay if you use clarified butter because it doesn't have that milk particles, so it doesn't burn. But I love that nutty, burnt flavor, so I cook with regular butter once in a while.
