Why can't I have multiple options for 2FA on Coinbase? Or 3FA?

Ideally:

1FA: Email and password
2FA: Passkey
3FA: Push notification to mobile

Yubikey as backup

I’m right there with you, Dan.  When did multi-factor authentication become “you get 2 and only 2 - that fulfills the definition of multi”?

1FA: Email & Password
2FA: Either
-> Yubikey
-> Email Code && Authenticator Code

so two weaker 2FA methods together have the same power as one stronger one.
