My first time making pesto! This one is watercress-based. Pretty good but not as peppery as I was expecting 🤔

I’ve never tried making watercress pesto, but as an italian i can tell you that one should not be using a food processor to make basil pesto. Pesto literally means “squished”, so always use a pestle and mortar with basil pesto. The purists would say that one wants to make it so that heat does not get to the leaves as they are being processed, as that changes both color and taste.
