I never would have thought that flour brand could have such an impact on quality output. Just saying Caputo 00 flour is my dream pizza flour.

I also got some yeast from them and trying that for the first time. Hope I get a nice output. Do you just use Caputo or do you mix your flours? I use 20% fine semolina flour too.

I only use Caputo flour. Usually, I make the dough with 400 grams of flour and 240 grams of water. I’ve also tried mixing in whole wheat, using 320 grams of flour and 80 grams of whole wheat. I found this ratio to be the best, so I’ve kept a record of it Hope you get great results!💛
