It’s Friday and on Fridays I slow cook on work breaks. Today, chicken and leek white wine stew. Marinated the chicken overnight with white wine, pepper, salt, bay leaves, rosemary. Drain it the next day (set aside the marinade), pat dry wirh paper towels, I covered it in spelt flour but you can use any flour and seared it in a dutch oven with olive oil. Take the chicken out of the pan and add 3 chopped garlic cloves and rosemary twigs, cook till fragrant. Then throw in the white wine marinade you set aside and glace. Scrape the bottom of the pan and boil till its reduced to half the liquid. I poured 1lt of vegetable broth (u can use chicken) threw in 1 sliced leek and 3 chopped celery stems. Here I cooked for 25 min. You’re supposed to do 15 but I had a call. Put the chicken in the mixture and pop in oven at 180C for an hour and a half while you write Touch Grass (optional writing newsletter) Turn off oven and finish the day, then eat later!
