OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

A full English brekkie comes with a lot of fat, back in the old days, this is what farmers used to eat and run on until late evening Fat is a great resource of energy. So, boils down to needs during the industrial revolution (aka high energy meal that lasts for a long time) and also locally sources produce.

Go to the European Mediterranean and you can find locally sourced produce in form of vegetables in abundance. I love a good fresh salad when visiting these countries.
