it really isn't "oh my god the food in Europe is so good" it is "the food in America is so bad" what's even more insane is how this "healthy food premium" is de facto accepted by people in the US instead of pushing for a change at the incentive level. same with insurance & healthcare, but even larger incentive there

US healthcare and insurance companies make almost all their money from unhealthy eating, so we're going to continue to see heavy subsidies on the least healthy foods, and kids are still going to be taught weird dietary disinformation in school, like how eating a ton of bread is ideal.
