The end product: vegan dirty rice. In traditional dirty rice, the dark color comes from browning chicken liver or gizzards. This one is made with tofu, and ingredients like tamari, thyme, sage, oregano, Worcestershire, onions, garlic, celery, green bell peppers, and a bit of red wine. 🍷 The rice is cooked with the tofu and veggies in a blended mix of bay leaves, green onion, fresh garlic, fire roasted tomatoes, and water. 🤌🏻

Looks incredible! Are you vegan? I've been for like 6 years or so

My partner is vegan, so 100% of our home-cooked meals are vegan. Ans while I am not officially vegan, my diet is probably 95% vegan. With the exception of eggs (which we got from our own chickens until about a year ago), I only really eat animal products when I'm travelling and the vegan options are lacking.

Didn't know you were vegan... What happened with the eggs?

We had backyard chickens for a couple years, which was the compromise when our food supply went otherwise vegan. But our backyard became borderline unusable so we departed with the chickens and I just buy eggs now.
