Probably Obsidian. https://obsidian.md/ It's the only note-taking app I've been able to stick with, probably because (1) it's all just plain text files and (2) because of that I have relatively little fear of lock-in.

im a big apple notes user. Is this better? ( I use voice to text often)

I've never been an Apple Notes user (same lock-in fears), so I couldn't really say. But Obsidian's really extensible, so there's a lot you can do with it. And the fact that everything's plain text / Markdown means that you can do a lot of post-processing outside of Obsidian, and it "just works".

One example: I keep my Obsidian notes in git, and then use GitHub Actions to split out the subfolders that represent my websites into public repos. GitHub repo for my central site: https://github.com/necopinus/necopinus.xyz Built website: https://necopinus.xyz/

It's worked out great so far. My website's kind of plain, but that's because I (1) wanted it to be browsable in GitHub in the same way it's browsable as a site, and (2) eventually I want to create a Gemini capsule that mirrors it. But without those restrictions you could do something far fancier / more modern looking.
