It's the only note-taking app I've been able to stick with, probably because (1) it's all just plain text files and (2) because of that I have relatively little fear of lock-in.

I've never been an Apple Notes user (same lock-in fears), so I couldn't really say. But Obsidian's really extensible, so there's a lot you can do with it. And the fact that everything's plain text / Markdown means that you can do a lot of post-processing outside of Obsidian, and it "just works".
