Why don’t I see any ZK based applications in non EVM chains(Solana, Aptos, Cardano etc) ? Do they not care about privacy or am I ignorant? If you come across ZK based applications on non EVM chains pls shill them below, would love to take a look.

I think you're just seeing a lot of public user facing content around. Zk EVMs and zkRollups because that's where the devs/money/users are. E.g. at Polygon we have 2 zkEVMs (Hermez and Zero) but also 2 general zkVMs (Miden VM and Valida) as well as just plain proving systems (plonky2).
