I’m a huge foodie and an amateur cook, and one of my favorite things is exploring and trying to recreate dishes from different cuisines worldwide. 🌍👨‍🍳

My favorite dish was Mirza Ghasemi! A simple Persian eggplant and tomato dish served with egg and rice or bread. Here's the recipe by @nika-kh. Thanks, Nika; you got a copy of "FREE THE AI."

Mirza Ghasemi is a simple and delicious Iranian dish with an attractive appearance.

Ingredients:
	4 eggplants
	3 tomatoes
	3 eggs
	4 garlic cloves
	Salt, pepper, turmeric
	Oil

Instructions:
	1.	Roast the eggplants over an open flame or in the oven, peel, and mash them.
	2.	Prepare the tomatoes by peeling and chopping them.
	3.	Fry the garlic in some oil until golden.
	4.	Add the mashed eggplants and tomatoes to the garlic. Season with salt, pepper, and turmeric. Cook until the liquid evaporates.
	5.	Add beaten eggs and mix until fully cooked.
	6.	Serve in a dish, garnish with herbs, and enjoy with bread or rice.
