I've asked this before, but am having a tough time getting candid/thoughtful answers.... As someone who relies on using my credit card for accumulating points, what is my incentive to switch over to spending with USDC instead?

it's just the dollar onchain, so the only reason today is if it benefits the merchant or if your income is based in USDC (since credit cards don't exist in crypto). but this should change as Apple opens up their NFC experience to developers.

sure! - someone rewards you with $10 USDC - you want to spend it IRL - tap phones to trigger Coinbase wallet - pay a merchant directly - instant rewards from onchain activity no identifying information needs to be exchanged, just like a traditional transaction (e.g. walking into a restaurant)

Ahh, so is the key unlock not necessarily the NFC, but the idea of it being compatible with existing POS systems? Because this is already possible (cc Onchain coffee purchases)

yes, so long as that POS system has the right NFC interfaces within software. rapid cross-consumer experience adoption!
