We're live! For some reason, Geth wasn't working, it was having some issues communicating with my consensus client, so I switched to Nethermind and it's now receiving and verifying blocks

I was going to say your CL did not seem to be connected to the EL. 

EL config can be confusing because there is a different port for HTTP server vs Engine API vs websocket. Easy to type the wrong one into config. 

Sometimes the OS will block access to the ports such as SELinux on Fedora or if it runs ufw.
