Today I decided to cook something simple yet cozy — chicken noodle soup. I take a couple of chicken thighs, toss them into a pot of water, add salt, a bay leaf, and a few peppercorns. While the broth is simmering, I finely chop an onion, a carrot, and a bit of garlic — then sauté them in a pan until golden. After that, I throw the veggies into the soup, add some noodles, and cook for about 10 minutes. At the end, a handful of fresh herbs to fill the house with aroma. Simple, tasty, and soul-warming.
