That’s exactly why I didn’t mash it. I did like the texture but apparently the flavour gets better when it’s mashed. So I’ll try it mashed the next time I make it 😁😁
On the stove, got a beautiful char.

I’ve never made it myself but I thought the big chunks of eggplant would add some texture to the dish. I love eggplant in any form. Did you roast it on the stove or in the oven?
