tomorrow I will have guests and I want to try making a new dish for myself, meze with eggplants here is the recipe: Bake a whole eggplant and bell pepper in the oven. They should become very soft. Then, cut the eggplant lengthwise, let the juice drain, remove the skin with a spoon. Also remove the skin from the bell pepper and remove the seeds. Chop the eggplant flesh, add finely chopped parsley, chopped pepper flesh, garlic. Add a spoonful of concentrated sesame paste, generously pour lemon juice, salt and pepper. Stir. Drizzle olive oil on top. Maybe someone has other options or can offer another meze recipe that they know?
