I have a question for US ppl: It feels like for most of these shows, there was the "white version" & the "black version". Were they watched by either demographic equally or was the viewership also fairly segmented? I'm asking cause we had those shows dubbed in France too, and everybody was watching them!

I think they were segmented more in lens than anything else. Subject matter was fairly universal and the writers were white, male creatives. Fresh Prince of Bel-Air tried to broaden the cultural scope, but all these shows tried to appeal to a broad working/middle class, compared to today did 10x viewer #s.
