coffees from this region can have a certain degree of brightness and acidity, so I pulled this as a ristretto (24g in, 32g out). not the best shot, some uneven extraction, but not terrible either. the weber baskets I use produce this particular “raindrop” pattern to the extraction which never really coalesces into a single stream. at first I thought I was doing something wrong but it is what it is.

DAK has been putting out some incredible roasts. Their washed Huila, Colombia (White Lotus) was in my sub box last month and it was so good!

if you’re doing pourover I could see rating their beans as quite exceptional for espresso I’m a bit less convinced but overall a big fan of their experimental processes
