Had some leftover tarragon and consulted The Flavour Bible. Grapefruit was highlighted as a complementary flavour. Challenge accepted! Seared Tasmanian salmon finished with a grapefruit + tarragon browned butter and a sprinkling of grapefruit pangrattato (crispy breadcrumbs). With a celeriac remoulade on the side.
