Pat the salmon dry (critical step). Season with what you like. (Garlic, paprika, some dill) Preheat oven to 375-400. Heat pan med-hi Put oil down (olive/avocado) I put some garlic cloves and rosemary to season the oil a bit. Let it get hot. Put fish flesh down. Press firmly for 15-20 seconds. Cook for ~3mins. DONT touch it. Watch it depending on how thick yours is so you don’t over cook it. Flip for another 1 min skin down. Put butter in so it quickly melts. Baste your fish. (Throw / coat melted butter over the fish with a small spoon). Put in oven for ~4-5 mins. Pull it! Should be fire. Just watch how fast it’s cooking so you don’t dry it out.
