if/when web2 data monopolies realize that they could be challenged by zkTLS startups, will they open up their APIs and let anyone easily exit their system, or will they fight harder to keep their monopoly?

"challenged". I don't think this will be the case for at least 20-30 years. There's enough data to harvest. It'll take a very successful one to actually be a challenge and even then, again, there's enough data to go round.
