I love spicy food, which means I also enjoy understanding the science behind it. For example, the fact that spiciness is its own sensation; unlike bitter, salty, sour, sweet, and umami, it isn't recorded by the taste buds and the nose, but by the free endings of the trigeminal nerve inside the mouth. 1/3

In fact, both forms of heat (spiciness and high temperature) activate the same nociceptors and thus register equally as pain, but of an addictive kind that stimulates neural activity. It's also been shown that regular exposure to spicy food helps those pain receptors regress (i.e., gradual habituation). 2/3
