I love spicy food, which means I also enjoy understanding the science behind it. For example, the fact that spiciness is its own sensation; unlike bitter, salty, sour, sweet, and umami, it isn't recorded by the taste buds and the nose, but by the free endings of the trigeminal nerve inside the mouth. 1/3

In terms of cuisines: Thai, Sichuan, and Japanese, I’d say. I love that Thai food has simple, fresh spicy dishes like salads. Sichuan dishes tend to be heavier, more suitable for when it’s cold. And wasabi operates uniquely, with volatile compounds that trigger nose receptors and clear your head like nothing else
