Prepare the tomatoes: If using fresh tomatoes, grate them (discard the skins), or you can dice them finely. If using canned diced tomatoes, simply open the can. Cook the sausages: Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Slice the sausages into rounds and fry until browned and cooked through, about 4-5 minutes. Remove the sausages from the pan and set them aside. Sauté the vegetables: In the same pan, add another tablespoon of olive oil and sauté the chopped onion, bell pepper (if using), and garlic until softened and translucent, about 4-5 minutes. Add the tomatoes: Pour the grated or diced tomatoes into the pan, and season with salt, pepper, and oregano. Simmer for 8-10 minutes, stirring occasionally, until the tomato mixture reduces and thickens slightly. Scramble the eggs: In a bowl, beat the eggs with a pinch of salt. Once the tomato sauce has thickened, add the sausages back into the pan and stir to combine.
