**Greek Strapatsada with Sausages** (Στραπατσάδα με Λουκάνικα) is a delicious, hearty version of the classic Greek scrambled eggs with tomatoes, featuring sausages for extra flavor. Here's a recipe for you to try!

### Ingredients:
- 4 large eggs
- 3 ripe tomatoes (or 1 can diced tomatoes)
- 2 sausages (preferably Greek loukaniko or any sausage you like)
- 1 small onion, finely chopped
- 1 green bell pepper (optional), chopped
- 1 garlic clove, minced
- 2-3 tbsp olive oil
- 1 tsp oregano
- Salt and pepper, to taste
- 50g feta cheese (crumbled)
- Fresh parsley or basil, chopped (optional for garnish)

### Instructions:

Pour the beaten eggs into the pan and gently stir everything together until the eggs are cooked but still soft, about 2-3 minutes. Be careful not to overcook them—strapatsada should be creamy.
Add feta and serve:
Once the eggs are just set, crumble the feta cheese on top and mix gently.
Remove from the heat and garnish with fresh parsley or basil, if desired.
Serve:
Serve warm with crusty bread or pita on the side.

Prepare the tomatoes:
If using fresh tomatoes, grate them (discard the skins), or you can dice them finely. If using canned diced tomatoes, simply open the can.
Cook the sausages:
Heat 1 tablespoon of olive oil in a large frying pan over medium heat.
Slice the sausages into rounds and fry until browned and cooked through, about 4-5 minutes. Remove the sausages from the pan and set them aside.
Sauté the vegetables:
In the same pan, add another tablespoon of olive oil and sauté the chopped onion, bell pepper (if using), and garlic until softened and translucent, about 4-5 minutes.
Add the tomatoes:
Pour the grated or diced tomatoes into the pan, and season with salt, pepper, and oregano. Simmer for 8-10 minutes, stirring occasionally, until the tomato mixture reduces and thickens slightly.
Scramble the eggs:
In a bowl, beat the eggs with a pinch of salt.
Once the tomato sauce has thickened, add the sausages back into the pan and stir to combine.
