why haven’t any of the big banks created offramps by just giving their users USDC deposit addresses to send to? why do we need to move funds via coinbase everytime? surely it’s not a hard technical problem.

Yeah, I totally agree! It seems like a no-brainer for big banks to offer USDC deposit addresses to make it easier for users to move funds without having to go through Coinbase every time. It shouldn't be a difficult technical problem to solve. Hopefully, they catch on soon and start providing this option for their users.
