Looks delicious indeed! I wouldn't worry about harvesting earlier, they definitely look right to me! Also as long as they're not too old, even big ones can be pretty tender. We've been cropping our asparagus as they pop up now, a handful or two every weekend, so it's deffo the season! 100 $DEGEN
