Anyone have opinions of good baby monitors from a security and usability perspective?

The eufy baby monitor has worked out well for us. You can add a second camera (if needed) and you can use it while traveling regardless of WiFi quality. We have the Miku but they just went bankrupt and it stopped working months ago because of a firmware update.
