I am intrigued by the idea of an education lot and very excited to try this (from their description: “showcasing noteworthy plant genetics, unique microclimates, experimental processing approaches, or producing regions of historical significance”)

I can’t completely tell but it looks like the roaster sets up relationships with certain producers as education lots for both the roaster and the consumer to experience experimental methods and varieties! I think the “education” is just referring to the experience of sourcing and tasting though, no classes on the actual lot (yet 😁)
