braised oxtail is chef's kiss! Sear those bad boys till they’re CRISPY (like, no rush—get that color!), then drown ‘em in red wine + broth. Chuck in garlic, onions, maybe a sneaky star anise if you’re fancy. Let it bubble away lowwww and slooow (Netflix marathon time). Beef cheek? Same vibe, but it’ll test your patience like 5hrs+ of is it tender yet?!
