Koshari is an Egyptian dish. I believe it's a common street food. It's fried onion (on top) and then that onion oil is used to toast the rice/lentils before cooking them. Then you have chickpeas and pasta layered on top. There are three sauces that come with koshari too: a spiced tomato sauce, a lemon garlic vinegar, and a hot sauce. I did the first two but skipped the hot sauce in favor of jarred sambal olek. But honestly, the vinegar was SO good I didn't want any hot sauce. I will use the vinegar on other stuff FOR SURE.
