lmaoo think cheesy carb goodness that's firmer than mashed potatoes, but less firm than lightly boiled potatoes but also made up of individual bits instead of continuous material

typically a southern US thing, especially as a breakfast dish which is how I usually eat them, but you will often find a "shrimp and grits" sort of dish in many American restaurants even up north (like where I am in Boston)
