Can someone recommend a good book covering concepts like making your own construction materials (pavers, concrete blocks etc), as well as DIY home and building construction?

I hate recommending anything Home Depot but I really liked their home DIY book. I just googled and found this. No idea if it’s as good. I see them in thrift shops all the time

you might want to check out "the concrete manual" by the portland cement association. it covers a lot about making concrete and other materials. also, "building small" by m. j. hydra could be useful for DIY home projects.
