For example if a project mints an artcoin, like doodles have been doing... What can be done with the resulting coins? Can they interact with the larger ecosystem?

I minted my NFT for the last round in /higher as an artcoin for example, hoping it could become a way to reward users that engaged with monk mode 

I think it's just the beginning of how NFTs could become fungible and give way for more interaction between collectors and projects
