Welcome to the jungle, Belize Day 1 travel notes: - English is the official language as a former British colony - capital city was moved away from Belize city bc it was under sea level and flooded too often - it’s hot. And humid. I thought maybe the locals were more acclimated but they say it’s been hotter and hotter and feeling the effects of climate change. Sad to hear how they talk about it. - it’s beautiful

Mayan cooking class notes: - chocolate making from cocoa beans. Roast the beans, crush to break the shells, use a special technique which uses air and gravity to separate the nibs from the shells. Grind the nibs to form a paste. Tastes nutty and yum as-is. Add milk and sugar to make chocolate. Add water and ice to make a drink. - made corn tortillas. Dried corn meal plus water to make a dough, flatten into circles, cook - drank beverage of corn meal mixed with water - main dish was caldo, colloquially known as backyard or local chicken (not store bought)- chicken soup, cooked over fire for several hours. With fresh herbs and habanero. Delish! -The Mayan ladies who ran the cooking class have all the ingredients in their yard - chicken, corn, herbs, yes, but also cocoa, and black pepper, allspice, vanilla and they harvest and grind all the spices from their yard
