Mayan cooking class notes:
- chocolate making from cocoa beans. Roast the beans, crush to break the shells, use a special technique which uses air and gravity to separate the nibs from the shells. Grind the nibs to form a paste. Tastes nutty and yum as-is. Add milk and sugar to make chocolate. Add water and ice to make a drink.

- main dish was caldo, colloquially known as backyard or local chicken (not store bought)- chicken soup, cooked over fire for several hours. With fresh herbs and habanero. Delish!
