Doing some quick pickling with the veggies from the backyard garden. Weโ€™ve got string beans, jalapenos and cucumbers. Cut em up. Place in jars. Add some garlic cloves, dill and other spices. I went with fennel seed, dill seed and some peppercorns. Bring vinegar, water, sugar and salt to a simmer and then pour brine to fill the jars. Bring to room temp, put the lids on, and place in fridge.

So you donโ€™t finish the jars in a submerged boil? With your method how long is there shelf life?

Good question and Iโ€™m but actually sure. Internet says anywhere from a week to 2 months stored in the fridge this way. They usually get eaten up with in a week or two.

I made pickles for the first time a week ago and I agree they donโ€™t last long. I did finish them in a 30 min boil with a 24 hr rest before long term storage. I think they will last years this way. If your method needs to be refrigerated then I would have 20+ jars clogging up my fridge. Also, do the jalapeรฑos impart their spice onto the rest of the items in the jar?
