Blend tomatoes, red bell peppers, and half of the onion into a smooth paste. 2. Fry the blended mix in vegetable oil until it thickens. Add garlic, ginger, and spices. 3. Add broth and bring to a boil. 4. Rinse rice, then add it to the pot and stir well. 5. Cover and cook on low heat until the rice is tender. 6. Stir occasionally and adjust seasoning as needed. 7. Serve hot with your choice of protein and fried plantains.
