i might be 100% wrong, but I don't really get the use-cases for a fhe blockchain yet

it's technically & aesthetically really cool
but there's very few use-cases you can unlock w/ only FHE

what's your take on this ?

You are right, FHE doesn't work on its own, you need MPC (threshold decryption) for the private key and ZKP to prove that the ciphertexts are correctly obtained. 

Then you can unlock a lot of use cases. 
 - tokenisation of RWA where confidentiality is needed for the balances
 - confidential stablecoin transfer (encrypted amount) 
 - blind auctions 
 - onchain identity 
 - gaming like Poker or Blackjack
