Does everyone just use tokio for async rust still? or are there other contenders?

Tokio is the standard. It's a bit unfortunate there aren't really any prevalent competitors, since Tokio interfaces for async-flavored traits (like AsyncRead) are becoming "standard" and we're losing the benefits of choice of async runtime.
