Having used both. If you want to move fast and utilise concurrency as a primitive; hands down Go is the way to go. Rust is a more specialised language. I'd even say start with Go. Once you hit a roadblock (I.e. performance, wasm interoperability, FFI, interop with C) - then switch to rust if needed.

One way to reduce call data or data size in general is to abi.encodePacked. You do need to know the types to decode though. Solidity assembly could help here too
